The next course of our meal with JS and Dianne was a straightforward salad preparation, made a bit more interesting through the addition of starfruit. We added orange slices as well as the two fruits work very well together, and dressed it with a starfruit vinaigrette.
Unfortunately the vinaigrette didn't work as well as I'd hoped; the flavour of starfruit is pretty delicate and didn't really come out after being mixed with oil and vinegar. Further experimentation is definitely needed.
starfruit , white wine vinegar (or lemon juice) , olive oil , salt , pepper

Recipe:Juice the starfruit, removing the pulp to obtain a clear starfruit juice. Pour into a pot and heat to reduce and concentrate the flavour. Leave juice to cool, then add vinegar to achieve desired sourness. Season with salt and pepper, and then whisk while adding olive oil to make a vinaigrette.

Recipe:Wash the spinach and cherry tomatoes.
Toast pine nuts slightly in a pan.
Supreme the oranges, and slice the starfruit.
Mix all ingredients together, and toss with dressing. Serve.
