A quick and simple breakfast for a Sunday morning. We actually don't fancy pancakes that much, but had a bunch of blueberries we wanted to finish off, so we decided to use a recipe for waffles instead. But since we don't have a waffle maker (yet!), we cooked the waffle batter on a griddle, and ended up with something pretty close to pancakes. They taste a little different than your normal pancake though; slightly lighter and not as chewy. The recipe is from How To Cook Everything by Mark Bittman.

Blueberry Pancakes

Ingredients:
  • 2 cups plain flour
  • 1/2 tsp salt
  • 2 Tbsp sugar
  • 1 1/2 tsp baking soda
  • 1 1/2 cup yoghurt thinned with 1/4 cup milk
  • 2 eggs separated
  • 4 Tbsp melted butter
  • 1/2 tsp vanilla extract

Recipe:

Whisk yoghurt and milk mixture with egg yolks. Add melted butter and vanilla extract.

Beat egg whites till they form soft peaks.

Add flour, salt, sugar and baking soda into a bowl and mix. Add the wet mixture (yoghurt etc.) to form a batter. Add the blue berries. Gently fold in the egg whites.

Spoon a portion of the batter onto a hot and oiled griddle. The batter will be foamy so you need to push it down with a spatula till you get the thickness you want (not too thick or the insides won't cook). Repeat for however many pancakes can fit on your griddle. Flip the pancakes when one side is browned, and remove from the griddle once done. Serve with maple syrup.
