We didn't have cream to bake scones for brunch, so we made flatbread instead. Adapted the recipe from Jamie Oliver's jalapeno bread. We made a sweet version to go with the fruits.

Flatbread with Honey and Fruits

Ingredients:
  • 125g plain flour
  • 125g yoghurt
  • 15g sugar
  • ground cinnamon
  • 1.5tsp baking powder
  • honey
  • fruits (we had figs, peach, cherries and blue berries, but anything goes)
  • sugar
125g plain flour
['plain flour']
125g yoghurt
['yoghurt']
15g sugar
['sugar']
ground cinnamon
['ground cinnamon']
1.5tsp baking powder
['baking powder']
honey
['honey']
fruits (we had figs, peach, cherries and blue berries, but anything goes)
['fruits']
sugar
['sugar']
Recipe:
Mix plain flour, yoghurt, sugar, cinnamon and baking powder. Knead the dough slightly on a lightly floured surface. Divide the dough into 2 pieces and roll them out thin. Cook them on a pan or grill, 2-3 minutes on each side.

Meanwhile, cut the fruits. Mix the fruits with sugar to soften and for additional sweetness.

Drizzle honey on the flatbread, topped with the mixed fruits. Serve.
