 Its been a while since we posted an ice-cream recipe, so here's a quick and simple one.

Passion Fruit Ginger Sorbet

Ingredients:
  • 100g sugar
  • 150ml water
  • 100g passion fruit juice (~4 passion fruits worth)
  • 1 lime
  • ginger
  • 3.5tsp white rum / vodka

Recipe:
Add the water to a pot, heat gently, and mix the sugar till dissolved to obtain a sugar syrup. Let the syrup cool, then add the passion fruit juice and juice from 1 lime.

Juice the ginger (for example by blending and then squeezing through a sieve). Add ginger juice to the syrup till the ginger flavour is just detectable; it should feel a bit spicy, but not overwhelmingly so.

Add the alcohol to taste; its mainly there to help soften the sorbet.

Churn syrup into a sorbet following the instructions for your ice cream machine; remember to chill it first if necessary! Yields a bit less than 1 pint. It turned out a bit sweet, so you might be able to get away with adding more water, perhaps up to 180ml.
