potato tomato breakfast sausage casserole

Sometimes you feel like having a full breakfast in the morning, with eggs, sausages, roast tomatoes, fried potatoes, the works. But you're too lazy to cook so many different dishes (and you don't relish the thought of filling the whole house with oily smoke). This "casserole" turned out to be a good alternative; its dead simple to make.

Breakfast Casserole

Ingredients:
sausages , tomatoes , potatoes , garlic , onions , dried rosemary , salt , pepper , oil
sausages
['sausages']
tomatoes
['tomatoes']
potatoes
['potatoes']
garlic
['garlic']
onions
['onions']
dried rosemary
['dried rosemary']
salt
['salt']
pepper
['pepper']
oil
['oil']
Recipe:
Cut potatoes into bite sized chunks. Par-boil in a pot of water, drain, and place in a casserole pan.

Cut sausages, tomatoes and onions into chunks as well, and add to the pan. Smash garlic with the flat of a knife, leaving the skin on, and add to the pan. Add a liberal amount of oil. Season with rosemary, salt and pepper, and mix thoroughly so all ingredients are evenly seasoned.

Put casserole pan into an oven at around 180C, and bake for 10 minutes or so till everything starts to brown.

Serve by portioning onto a plate and top with a fried egg.
