Macadamia Nut Ice Cream with Honey

Finally, the dessert to end the meal. Ai Qi just bought the KitchenAid ice cream maker not too long ago, so I decided to try my hand at an ice cream. This is a Philadelphia-style ice cream based on a vanilla ice cream recipe, with the flavours of macadamia nuts. Its topped with pure honey, nature's ready-made dessert topping.
All three courses to this year's dinner were recipes I came up with, although I did base them to varying degrees on recipes found online. The most helpful thing in planning the dinner, however, was The Flavor Bible, a book with lists of suggested flavour pairings for almost every ingredient you can think of. It gave me the idea of the trio of flavours for the appetizer, the use of apples with pork, and nuts with honey. If you like to cook without a fixed recipe, this book is a great source of inspiration!

Macadamia Nut Ice Cream with Honey

  • ¼ cup milk
  • ½ cup cream
  • 50ml sugar
  • macadamia nuts
  • dash of amaretto
  • ~½ tsp vanilla extract
  • honey
¼ cup milk
½ cup cream
50ml sugar

Roast macadamia nuts. Coarsely chop nuts, then divide into two portions. Blend one portion into a fine powder. Combine in a pot the milk, cream, sugar, powdered nuts, amaretto and vanilla extract. Heat mixture gently till it reaches 75C, then leave aside to cool fully before placing it in the fridge to chill further.

Churn in the ice cream machine, adding the chopped nuts halfway through. When done, spoon into container and put in the freezer to set.

Serve a scoop of the ice cream by drizzling honey over it.
