Coriander Roast Chicken with White Sauce

I had to settle my own dinner one evening, and earlier in the day I read a post on Serious Eats about Halal Cart-Style Chicken and Rice with White Sauce. I've never actually eaten this street food dish while I was in the States, but just reading through the recipe and looking at the photo was enough to set me drooling, so I decided to use it as an inspiration for my own meal. What I ended up with looks quite different, and probably tastes quite different as well, but it was still a pretty decent dinner.
Note: For this recipe I'm trying something new. In the ingredients list, I will bold the ingredients that contribute to the key flavours in the dish. Since I usually don't bother to add quantities, you can use this as a rough guide as to which ingredients you should add more of.
 

Chicken



Coriander Roast Chicken with White Sauce

Ingredients:
chicken leg , lemon juice , lemon zest , coriander powder , garlic , fresh coriander leaf , oregano , white pepper , salt , oil

lemon juice
['lemon juice']
lemon zest
['lemon zest']
coriander powder
['coriander powder']
garlic
['garlic']
fresh coriander leaf
['fresh coriander leaf']
oregano
['oregano']
white pepper
['white pepper']
salt
['salt']
oil
['oil']
Recipe:
Mix all ingredients (minus the chicken leg) together to form a marinade. Marinade chicken and leave for at least 30 minutes.

Put in a hot oven (~200 C) and roast till done.

Rice



Ingredients:
arborio rice, garlic, butter, cumin, turmeric, black pepper, fresh coriander leaf, salt, water

Recipe:
Add butter with a dash of oil in a saute pan. Add garlic and saute for a short while, then add cumin and turmeric. Stir to mix and then add rice. Toast rice for a while, then add water and cook at low heat till rice is done. Season with black pepper, fresh coriander leaf and salt. Don't make it too salty as its meant to go with the white sauce.

You can use chicken stock instead of water for more flavour; I didn't have any on hand, sadly.

White Sauce



Ingredients:
yoghurt, mayonnaise, white wine vinegar, lemon juice, spring onions, fresh coriander leaf, coriander powder, sugar, salt, pepper.

Recipe:
Chop finely coriander leaf and spring onions, and add to a bowl. Add white wine vinegar, lemon juice, and some sugar. Mix in yoghurt and mayonnaise. Add a little bit of coriander powder; just to echo the flavours in the chicken. Salt and pepper to taste.


Coriander Roast Chicken with White Sauce



Place a salad of lettuce and tomatoes on a plate, followed by a serving of the rice. Finally place the chicken leg on top, and drizzle all over with the white sauce. Serve.
