Smoked Duck and Roasted Vegetable Salad

We cheated for this recipe; the smoked duck breast was store bought! Sometimes you just want to put together a quick meal and using pre-cooked foods from the supermarket is a good option. This was served as a side salad, but if you use enough duck breasts it can probably be a main course (perhaps with a bit of bread).
We also used a homemade balsamic vinaigrette as the salad dressing; I'll add a link to a recipe for that soon.

Smoked Duck and Roasted Vegetable Salad

Ingredients:
Smoked duck breast , romaine lettuce , red and yellow capsicums (bell peppers) , zucchini , cherry tomatoes , salt , pepper , salad dressing

Recipe:
Cut the capsicums into large strips. Slice the zucchini into thick rounds. Toss the capsicums, zucchini and tomatoes in cooking oil, and then season with salt and pepper. Place on a grilling pan, and then put in oven to grill till slightly charred.

Tear romaine lettuce into large pieces. Slice smoked duck breast. Place the roasted vegetables, romaine lettuce and smoked duck breast in a bowl. Add salad dressing and toss to mix. Serve.
