Peanut Cookies

This year, we wanted to keep our Chinese New Year baking as simple and quick as possible, since there was spring cleaning to complete. We looked through some recipes, and decided that peanut cookies are still one of the fastest things to bake. And so here it is, a recipe that we got from our friend many years ago.

Peanut Cookies

  • 300g plain flour
  • 100 g ground peanuts
  • 100g fine sugar
  • 0.5tsp salt
  • 200ml corn oil
  • 1 egg yolk

200ml corn oil

1 egg yolk

Mix plain flour, ground peanuts, sugar and salt.

Slowly add in the corn oil and mix continuously.

Heat the oven to 150 degrees C.

Roll the dough into small balls (and I really mean small balls for bite-size pieces, as they will grow during baking). Glaze the top of the peanut cookies with a small amount of egg yolk.

Bake the cookies for around 15 minutes. Cool the cookies. Consume!
