Salt and Pepper Prawns

This was a quick and easy dish we whipped up after work one day, drawing inspiration from all the salt and pepper (椒盐) dishes we had while in the US. We had almost finished all of them before I decided to take a picture; that's the very last prawn with the empty bowl below it!

Salt and Pepper Prawns

Ingredients:
Prawns , cornstarch , salt , garlic , white pepper , coarse ground black pepper , cayenne papper , chilli flakes , parsley

Recipe:
Shell and devein prawns. Mix cornstarch and a bit of cayenne pepper and white pepper in a bowl. Toss prawns with the cornstarch mix to get a light coating.

Mince garlic. Finely chop parsley. Fry garlic in wok with not too much oil till golden. Transfer to a large bowl, with just a little bit of the oil (keep the remaining oil for the deep frying step). Mix the garlic with parsley, salt, white pepper, black pepper and chilli flakes.

Add more oil to the wok and heat. When ready, deep fry the prawns till done. Shake off excess oil and toss prawns in the bowl with garlic, parsley, etc. Serve.
