Chilled Mango Soup with Strawberry Coulis

The last course of the Valentine's Day dinner I prepared. Sadly the photograph isn't very good, but it tasted pretty awesome. The coulis is slightly spicy, to give some interest; you can remove the spice if you don't fancy it.
Its important to use a mango that is nice and ripe. The flesh should be soft to the touch, and it should taste very sweet with no sour notes at all.

Mango Soup

Ripe mango , evaporated milk , simple syrup (2 parts sugar to 1 part water)

Cut mango into cubes. Save some of the cubes for adding to soup later. Blend remaining cubes till smooth, adding a bit of evaporated milk to give it a more creamy texture. Adjust sweetness to taste using simple syrup. Add mango cubes and keep chilled.

Strawberry Coulis

Strawberries , sugar , brandy , lemon juice , cayenne pepper , red food colouring

Chop strawberries. Caramelize sugar with a bit of water in a pan. Add strawberries, brandy, lemon juice and cayenne pepper. Cook at low heat until strawberries are slightly soft. Remove from heat and puree, adding a bit of food colouring to adjust the colour if necessary. Sieve to get a smooth sauce.

Note: Since the mango soup is quite sweet, the coulis should be made slightly more sour, through the addition of lemon juice. The brandy also helps add a bit of alcoholic bitterness, and the cayenne pepper an interesting spicy aftertaste.
