Crispy Pork Belly and Watermelon Salad

First course of a Valentine's Day dinner I prepared. This recipe was inspired by one sent to me by Jie Siang; I mainly borrowed the idea of using watermelon with pork belly, and went from there. Ai Qi rates this the best course of the meal.

Crispy pork belly

Ingredients:
Pork belly , light soy sauce , dark brown sugar , pepper , corn starch

Recipe:
Braise pork belly gently with light soy sauce, dark brown sugar and pepper (basically a simple lor bak treatment). Remove when meat is soft, particularly the fat. Pat dry meat with paper towels and leave aside. Note: Meat should taste quite salty (think bacon).

Cut meat into strips, dredge in corn starch, and deep fry till crispy.

Vinaigrette

Ingredients:
Good balsalmic vinegar , extra virgin olive oil , salt , pepper , mustard powder

Recipe:
Whisk vinegar with salt, pepper and mustard powder, slowly introducing the olive oil while whisking.

Crispy Pork Belly and Watermelon Salad

Ingredients:
Crispy pork belly , vinaigrette , watermelon cubes , green leaf lettuce

Recipe:
Toss watermelon with green leaf lettuce. Serve with crispy pork belly atop the salad, drizzle vinaigrette dressing over. Keep chilled till serving.
