Burger and Fries

We had friends over for New Years' Eve, and decided to do something more casual and relaxed. So we served burgers with fries! The burgers were just your average beef burger, with cheese and a home-baked bun. The fries used a recipe from Serious Eats that goes into excruiciating detail on how to achieve the Perfect Fry. It turns out that recipe works really well; I'll give a summary of it below, but for the full thing do go check out the Serious Eats recipe as well as its accompanying article discussing all the science behind it.

Home-made Burger Buns

Ingredients:
  • 400g bread flour
  • 8g salt
  • 25g powdered milk
  • 31g caster sugar
  • 6g instant yeast
  • 31g butter
  • 251g water

Recipe:
Mix bread flour, salt, powdered milk, caster sugar and instant yeast together. Add water and butter and knead till ready. Rise once, degas, then divide into roughly 110g (~4 oz) pieces. Shape into rounds, leave to rest for 10 minutes, then flatten slightly to get a burger bun shape. Leave to proof. I found it helped to place a baking tray on top of the buns to make them more flat and burger-bun-like.

Bake in a 180°C oven till internal temperature reaches 90°C. Remove from oven and allow to cool fully.

Note: This recipe is also the one we use for sandwich bread, which we bake almost every week.

Beef Burger

Ingredients:

Recipe:
Mix beef with onion powder, salt and pepper; try not to over-mix as it results in a springy texture that is good for meatballs but not for burgers. Take a pinch of the meat and fry it in a pan if you need to gauge the seasoning.

Grill or sear beef patties till cooked. Remember to add some oil. When burgers are nearly done, add the cheese on top so the cheese will melt. It melts faster if you have some kind of a lid to trap the steam; we used a metal bowl on top of our grill pan.

Slice burger buns into two, butter both slices, and toast till slightly brown. Dress burger by placing the patties, then the lettuce, onions and tomatoes, and the sauce.

French Fries

Ingredients:

Recipe:
Peel the skin off the potatoes. Slice into 1/4-inch thick strips. Add some vinegar to a pot of boiling water (its okay to add more, the sourness from the vinegar won't be very obvious, and even then its a nice touch). Boil till potatoes are slightly soft.

Remove from the pot and dry on a baking tray lined with paper towels.

Heat oil in a pot till it reaches around 180°C. Add potatoes in batches and deep fry till they are a light golden colour, adjusting the heat source to keep the oil at around 180°C. Since we are frying them twice, make sure you don't over-fry them at this stage. Again, use a baking tray lined with paper towels to absorb the excess oil from the fries.

Freeze fries; we placed them in zip-lock bags and kept them for a few weeks before using. Freezing helps, see the Serious Eats article.

On the day of serving, remove fries from the freezer and let them thaw. Heat oil in a pot till it reaches around 180°C. Add potatoes in batches and deep fry again, till they are a nice golden colour, adjusting the heat source to keep the oil at around 180°C. Place in a baking tray lined with paper towels to absorb the excess oil.

Place fries in a bowl and add salt and pepper, and toss around to mix evenly. You can also add other ingredients at this stage, like garlic powder, or truffle oil to get truffle fries. Serve.
